Quick Cherry and Peach Crisp

After we went cherry picking, we made this delicious cherry almond cake. I still had a bowl full of cherries left to do something with. I debated making jam and cobbler and ultimately decided on this cobbler. Or is it a crisp?

Are cobbler and crisp really the same thing? That is one baking controversy I will never quite understand. For me, a crispy oat and sugar topping is definitely a crisp. I think cobbler is more cakey, but I think ultimately it depends what part of the country you are in. 

This was whipped up in a matter of minutes. It’s so easy that you can do it at the same time as making dinner. At least, that is what I did.

The crispy oat topping is so delicious and the brown sugar just sings. It’s delicious on its own or you can top it with ice cream or whipped cream. Or, if you are out of whipped cream and ice cream like I was, top it with honey flavored Greek yogurt and then drizzle some honey on the top. I’m telling you, it MADE the dessert ten million times more delicious. All of the tartness of the cherries with the sweetness of the honey and brown sugar were so perfectly paired. It was so good that I’ll probably always add Greek yogurt on top from here on out.

Quick Cherry Peach Crisp

For The Crisp

  • 2/3 c old-fashioned oats
  • 3/4 c flour
  • 1/2 c brown sugar
  • 3/4 c butter (divided)
  • 1/2 tsp salt

For the Fruit

  • 2 cups fresh cherries (pitted)
  • 1 can peaches (or 1 1/2 cups fresh)
  • 3 TBS sugar
  • 2 TBS flour

Optional Toppings

  • Honey Greek yogurt
  • Honey
  • Ice Cream
  • Whipped Cream

Directions

Preheat oven to 375. Grease an 8×8 pan and set aside. Combine flour. brown sugar, and salt. Cut in butter until crumbly. Gently stir in the oats. Set aside. Drain peaches and dice them to match the size of your cherries. Fold in the flour and sugar. Pour fruit in the bottom of the pan and sprinkle oat mixture on top. Cut remaining 1/4 cup of butter into small squares and place on top. Bake for 35-40 minutes until fruit is bubbly and the top is golden brown. Enjoy with a scoop of ice cream, whipped cream, or my personal favorite- honey greek yogurt with an extra drizzle of honey.
